  • ¼ teaspoon ground black pepper

  3. Toss Veggies: In a large bowl, combine the zucchini, squash, mushrooms, cauliflower, asparagus, and red pepper. Drizzle with vegetable oil, then sprinkle with salt, pepper, and your chosen seasoning. Toss to coat everything evenly.
  4. Air Fry: Spread the veggies in a single layer in the basket of your air fryer. Cook for 10 minutes, stirring halfway through to ensure even roasting.

Notes

If the basket is too full, your veggies will steam instead of roast. Cook in batches if necessary.
