Ingredients

  • 1.5 pounds baby potatoes These cook quickly and crisp up perfectly. You can use red, yellow, or mixed varieties.
  • 1 small onion Just one small onion adds a sweet, caramelized bite. Large chunks work best here.
  • 2 Tablespoons oil (light olive oil or canola oil)
  • 1 teaspoon seasoned salt
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 16 ounce package smoked turkey sausage I love smoked turkey sausage for a lean but flavorful option. Switch it out for beef, pork, or chicken sausage if you prefer.
  • 1 teaspoon dried parsley for serving (optional)
  • Honey mustard, ketchup, or barbecue sauce for dipping (optional)

Equipment

  • Air fryer

Method

  1. Slice the baby potatoes in half and cut the onion into large chunks.
  2. Place the potatoes and onion in a gallon-size zip-top bag. Add the oil, seasoned salt, garlic powder, and black pepper. Seal the bag, then toss everything until well-coated.
  3. Spray the air fryer basket with nonstick cooking spray. Pour the seasoned potatoes and onions into the basket.
  4. Set the air fryer to 400°F and cook for 15 minutes. Shake the basket halfway through to ensure even cooking.
  5. While the potatoes cook, slice the smoked turkey sausage into 1-inch pieces.
  6. After 15 minutes, add the sausage to the air fryer basket. Cook for another 5 minutes.
  7. Finish with a sprinkle of dried parsley, if desired, and serve with your favorite dipping sauces.

Notes

Don’t overcrowd the basket! Overcrowding prevents crisping. Work in batches if needed. Shake it up: Toss the basket halfway through cooking to ensure everything cooks evenly. Cut evenly: Keep your potato halves roughly the same size for even cooking. Add veggies: Throw in broccoli, bell peppers, or zucchini for extra nutrients. Skip the chopping: Use pre-cut potatoes or frozen diced veggies to save time. Storage: Leftovers? Store in an airtight container in the fridge for 3 days. Reheat in the air fryer for 5 minutes at 375°F.
