Ingredients

  • 2 to 3 cups tortilla chips Go for sturdy chips that hold up under layers of cheese and toppings. Thin chips might get soggy.
  • 2 cups shredded Mexican cheese blend A Mexican blend works wonders for melty goodness, but you can also mix cheddar and Monterey Jack.
  • 1 green onion, sliced (whites and greens separated)
  • 1/4 cup sliced black olives
  • 1/2 cup diced fresh tomatoes Diced tomatoes add freshness and flavor.
  • 1/4 cup diced jalapeños (optional) Jalapeños, pickled or fresh, are perfect for spice lovers.
  • 2 tablespoons chopped fresh cilantro (optional)

Equipment

  • Air fryer
  • Parchment paper
  • tongs

Method

  1. Place the tortilla chips in a single layer in the air fryer basket, slightly overlapping them so there are no gaps.
  2. Sprinkle half the cheese and the white parts of the green onion over the chips.
  3. Add another layer of chips on top.
  4. Top with the remaining cheese, green onions, olives, and jalapeños if using.
  5. Set the air fryer to 320°F and cook for 3 to 5 minutes, or until the cheese is fully melted. Keep an eye on them to prevent burning.
  6. Carefully remove the nachos from the air fryer basket (use tongs for precision) and top with diced fresh tomatoes and cilantro if desired.
  7. Serve immediately with salsa, guacamole, and sour cream on the side!

Notes

Overlapping chips slightly ensures cheese doesn’t drip through the basket. Adding cheese in the first layer ensures every bite has that ooey-gooey goodness.
