- In a large mixing bowl, whisk together olive oil, lemon juice, dried oregano, Dijon mustard, and kosher salt until well combined.
- Add the chicken cubes, zucchini, cherry tomatoes, red onion, chickpeas, and olives to the bowl. Toss everything until it’s evenly coated with the marinade.
- Preheat your air fryer to 400°F. Arrange the chicken and vegetables in a single layer in the basket. Cook in batches if necessary.
- Air fry for 10 minutes, shaking the basket 2–3 times during cooking, until the chicken is golden and cooked through (internal temp should hit 165°F) and the veggies are tender.
- Plate the chicken and veggies, then top with crumbled feta cheese and chopped dill. Serve immediately and enjoy!
