  • 1 pinch salt
  • ¾ cup panko bread crumbs
  • 2 tablespoons ranch seasoning mix
  • 4 (4-ounce) frozen cod fillets
  • Nonstick cooking spray

Method
 

  1. Preheat your air fryer to 400°F (200°C) for 5 minutes while you prep.
  2. Line the air fryer basket with a perforated parchment round to prevent sticking.
  3. In a shallow dish, whisk the egg with a pinch of salt until it’s frothy and lemon-colored.
  4. In another shallow bowl, combine the panko breadcrumbs and ranch seasoning.
  5. Dip each frozen cod fillet into the egg mixture, ensuring it’s fully coated, then press it into the breadcrumb mixture to adhere a thick, even layer.
  6. Place the breaded fillets into the air fryer basket in a single layer. Spray the tops generously with nonstick cooking spray.
  7. Cook for 8 minutes, then carefully flip the fillets, spray again, and air-fry for another 7 minutes, or until the cod flakes easily with a fork and the crust is golden.
