Ingredients
  

  • 2 8-ounce boneless, skinless chicken breasts (sliced lengthwise into 4 thinner cutlets)
  • 6 tbsp seasoned breadcrumbs (whole wheat or gluten-free)
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp butter, melted (or olive oil)
  • 6 tbsp reduced-fat mozzarella cheese (I used Polly-o)
  • 1/2 cup marinara sauce
  • Olive oil spray

Method
 

  1. Preheat your air fryer to 360°F. While it heats up, set up your breading station: mix the breadcrumbs and Parmesan in one bowl, and melt the butter in another.
  2. Lightly brush each chicken cutlet with melted butter (or olive oil), then coat completely in the breadcrumb mixture. Press gently to ensure the breading sticks.
  3. Spray the air fryer basket lightly with olive oil spray. Lay the breaded chicken in a single layer—work in batches if needed.
  4. Air fry the chicken for 5 minutes, then flip each piece. Top each cutlet with 2 tbsp marinara and 1.5 tbsp mozzarella. Return to the air fryer for 3 more minutes or until the cheese is melted and bubbly.
  5. Use an instant-read thermometer to ensure the chicken’s internal temperature is 165°F. Serve immediately and enjoy!
