Ingredients
  

  • ½ cup unsalted butter softened
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 2 cloves garlic crushed
  • 1 (16 ounce) package ground chicken breast
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • Cooking spray

Method
 

  1. In a bowl, mix the butter, parsley, and garlic until smooth. Scoop into 12 portions and freeze on a baking sheet for about 20 minutes until solid.
  2. Form ground chicken into 12 balls. Use your thumb to press a deep indent into each ball. Place a frozen butter portion in the center and wrap the chicken tightly around it.
  3. Whisk the eggs in a bowl. In another bowl, combine panko, paprika, salt, and pepper. Dip each chicken ball in egg, then coat with seasoned breadcrumbs. Repeat for even coverage. Freeze the breaded balls for 10 minutes to firm up.
  4. Preheat your air fryer to 400°F. Arrange half the balls in a single layer in the basket and spray with cooking spray. Fry for 5 minutes, flip, spray again, and cook for another 5 minutes. Repeat with the remaining chicken balls.
