- In a skillet over medium heat, add the ground beef and Mexican seasoning. Cook, breaking it up into small crumbles, until browned. Stir in the salsa and set aside.
- Spread 2 tablespoons of refried beans onto each tortilla, leaving a 1-inch border around the edges.
- Spoon the ground beef mixture on top of the beans, then sprinkle with shredded cheese.
- Fold one side of the tortilla into the center, then overlap the opposite side. Fold the top and bottom of the tortilla inward to seal into a rectangular pocket.
- Lightly brush or spray the chimichangas with oil and place them in your air fryer. Work in batches if needed to avoid overcrowding.
- Set your air fryer to 400°F and cook for 7-9 minutes, or until the chimichangas are crispy and golden.
- Serve immediately with your favorite toppings like sour cream, guacamole, or pico de gallo. Add a squeeze of lime for extra zing!
