Air Fryer Beef Chimichangas

These Healthy Air Fryer Beef Chimichangas are my saving grace on hectic weeknights. Ready in just 35 minutes, they’re crispy, hearty, and packed with flavor—all without the guilt of deep-frying.

Ingredients
  

  • 1 lb. lean ground beef
  • 1 tbsp Mexican seasoning
  • 1/3 cup salsa or diced tomatoes with green chilies, drained
  • 4 soft flour tortillas medium-taco size
  • 1/2 cup refried beans
  • 1 cup shredded Mexican blend cheese
  • Optional toppings: sour cream or Greek yogurt guacamole or avocado, pico de gallo or diced tomatoes, shredded lettuce, chopped cilantro, lime

Method
 

  1. In a skillet over medium heat, add the ground beef and Mexican seasoning. Cook, breaking it up into small crumbles, until browned. Stir in the salsa and set aside.
  2. Spread 2 tablespoons of refried beans onto each tortilla, leaving a 1-inch border around the edges.
  3. Spoon the ground beef mixture on top of the beans, then sprinkle with shredded cheese.
  4. Fold one side of the tortilla into the center, then overlap the opposite side. Fold the top and bottom of the tortilla inward to seal into a rectangular pocket.
  5. Lightly brush or spray the chimichangas with oil and place them in your air fryer. Work in batches if needed to avoid overcrowding.
  6. Set your air fryer to 400°F and cook for 7-9 minutes, or until the chimichangas are crispy and golden.
  7. Serve immediately with your favorite toppings like sour cream, guacamole, or pico de gallo. Add a squeeze of lime for extra zing!

Notes

Oil lightly—don’t skip this step! Brushing or spraying a light coat helps the tortillas crisp up beautifully.
