- Prep your air fryer. Preheat it to 400°F. This ensures they cook evenly and turn perfectly golden.
- Make the apple filling. Peel, core, and dice your apples into small, bite-sized pieces. Toss them with the lemon juice to keep them fresh.
- Cook the filling. In a medium saucepan, combine apples, water, sweetener, cornstarch, cinnamon, salt, and nutmeg. Bring the mixture to a boil over medium heat. Let it boil for 2 minutes to thicken, then reduce to a simmer for about 5 minutes, stirring often. Once the apples are soft and the sauce is glossy, take it off the heat.
- Assemble the egg rolls. Lay out an egg roll wrapper like a diamond. Place 2 tablespoons of the apple filling just below the center. Fold the sides toward the middle, then roll it up tightly. Seal the tip of the wrapper with a dab of water to keep it secure. Repeat with the rest of the wrappers.
- Air fry to golden perfection. Arrange the egg rolls in a single layer in your air fryer basket. Spray them lightly with cooking spray. Air fry them for 5-6 minutes, flip, spray again, and cook for another 5-6 minutes or until they’re golden brown and crispy.
- Time for the cinnamon sugar topping! Combine the sugar and cinnamon in a shallow dish. Once the egg rolls are done, roll each one in the mixture while they're still hot to coat them evenly.
- Optional: Drizzle with caramel sauce. Feel free to add a little sugar-free caramel sauce on top for an extra treat!
Notes
For best results, don’t overfill the egg rolls, as it can make them hard to roll and prone to bursting. Make sure to seal them tightly with a dab of water, and cook in batches to ensure even crisping. These are best enjoyed fresh and warm for maximum crispiness!
